Aran Soft Goats Cheese

Our Soft Goats Cheese takes approx a

week to mature and comes in two

sizes 200g and 600g.

The cheese is pasteurised and salted

before being packaged in sunflower

oil.

Products

Presently Aran Goats Cheese produces a soft cheese with or without Dillisk ( A seaweed harvested on the island by Gabriel,s Uncle in Law ) a Gouda which also comes infused with sea lettuce, or Dillisk, a medium hard cheese that looks like Brie and a Summer Cheese not unlike Feta. In the future Gabriel intends to also produce ice cream and yoghurt. The pigs on the farm are also fed the whey, bi product of cheese making, so nothing goes to waste, the pigs here are a breed called Tamworths and Gabriel intends to also sell products from them in the future. Our Dillsk comes from Blath Na Mara who harvest the weed on our shores here on Inis Mór

Gouda takes six weeks minimum to mature, the above photo shows the colour of the weed infusing the cheese as it matures the cheese changes colour outside but keeps this wonderful purple specks through the interior.

Goats Summer Cheese

Another cheese that needs to mature it increases flavour with age. Our summer cheese looks like a brie but has a firmer texture. A wonderful way to try our goats summer cheese is toasted on a baguette with caramelised onion marmalade or fig jam.

Goats Feta type cheese

Feta Cheese is traditionally made from Sheep’s milk and the EU has now stated that goats cheese cannot be called Feta. Generally speaking, the longer the goat cheese is aged, the stronger the flavour of the cheese becomes.

Gouda Maturing

Our Gouda is left to mature for a minimum of six weeks. Wit ha mixed herd of Saanen and Nubian goats this gives us a good mixture of butterfat to milk volume ratio.
