Saanen and Nubian Goats. We have 93 adult goats in our herd producing approx 1000ltrs of milk a week. The herd also has 70 kids the females are kept for future breeding stock. Our Billy goat is replaced every 2 years.50 ltrs of milk produces about 5 kg of hard cheese. The bi product of making cheese is the whey and we feed this to our Tamworth pigs on the farm.If you are interested in seeing how the cheese is produced we are running tours. Min people on a tour is 10 if you contact us there may be a tour running you could join. Our goats are kept indoors in August for breeding and again five months later when the new kids arrive, when in the fields they eat a lot of wild herbs along with grass and this gives the cheese a distinctive taste. The seaweed we add to some products is Dillisk and sea lettuce harvested locally by Gabriel,s Uncle in Law, (Gathering weed can be included in the tour if interest is shown)
In the future we intend to produce yoghurt and ice cream here but for now our range is soft cheese with and without dillisk, Goats Summer Cheese( like Feta), Gouda, and Goats Medium Hard Cheese. The Gouda also comes with Sea Lettuce and Dillisk infused. We look forward to seeing you if you visit Inis Mór and if you would like to book a tour of the island and cheese production with us you can pre book on our Bookings page.
